Recipe – Steamed Bitter Melon with Sweet Potato

。食譜—紫薯蒸釀苦瓜。

苦瓜不是人人喜歡食的食物,但它有它的益處,夏天裡間中食一下,也是不錯的。這天便用上家裡的新用具Bosch蒸爐HMT85DL53B,來做一道簡單零失敗的「紫薯蒸釀苦瓜」,紫薯近期大熱,而且其甜味剛好把苦瓜的苦味平衡了,更容易讓人接受。

In Summer, it is good to have some bittermelon to reduce the heat in your body. On this Green Monday, I have tried to use my new Bosch steam oven HMT85DL53B to make steamed bittermelon with sweet potato, which you would never fail to make.

材料:
苦瓜   1個
紫薯   2個
鹽       2茶匙

Ingredient:
Bitter melon   1 pc
Sweet potato   2 pcs
Salt                    2 tablespoons

做法:
1. 先將紫薯以熱水煮滾,放涼後打成蓉備用。
2. 苦瓜去頭尾,切成5至6節環,去囊。
3. 苦瓜飛水,瀝乾,將以鹽醃約5分鐘。
4. 將紫薯蓉釀入苦瓜環中。(記緊用力按壓一下,出爐時才不會鬆散。)
5. 將蒸爐調至80度,蒸10分鐘即可。

Procedures:
1. Boil the sweet potato to soft. After letting it cool, use hand blender to mash it.
2. Cut the bittermelon into 5 or 6 pcs as rings.
3. Quickly boil the bittermelon for around 1 min. Let it cool and season with salt.
4. Stuff the bittermelon with sweet potato. (Remember to give it a little bit pressure. Then it wouldn’t loose when you take it out from the oven)
5. Steam the bittermelon with 80 degrees for 10 minutes.

非常簡單易做的一道菜,也體驗到蒸爐的好處。由於食材已先飛水或蒸熟,所以不用以100度來蒸,而且蒸爐保持食材的原汁原味,以80度來蒸更是令顏色保持鮮嫩。
It is very easy to make and you can see the advantages of using a steam oven. The color and vitamins are well remained in the ingredients. 🙂
