[Recipe] Make your own Claypot Rice at Home!

[食譜]冬菇雞肉煲仔飯 – 以Le Creuset 煲輕鬆煮個自家煲仔飯

天氣涼了,總是想食煲仔飯暖暖身,這次用上Le Creuset 16cm Iron Handle Saucepan來做個簡單的冬菇雞肉煲仔飯,務求一小時內準備好,又可以食個熱騰騰的煲仔飯。

How lovely would it be if you can make a nice pot of claypot rice at home with Le Creuset 16cm Iron Handle Saucepan? I always try to prepare food in an hour and minimise the cooking time. So here we have this quick recipe for  the claypot rice with mushroom and chicken.

材料:(二人前)

  • 乾冬菇              3粒
  • 起骨雞腿          1塊 (約100g)
  • 米                       1杯
  • 水                       1 1/2 杯
  • 頭抽                   適量

醃料(雞肉用):

  • 糖                        1 茶匙
  • 鹽                        1 茶匙
  • 生粉                    1 茶匙
  • 生抽                    2茶匙

Preparation Time: 15 minutes
Cooking Time: 30 minutes

Ingredients (for two):

  • Dried mushroom        3pcs
  • Boneless chicken drumstick     100g
  • Rice                               1 cup
  • Water                           1 1/2 cup
  • Soy sauce                     a little

Seasoning (for chicken):

  • Sugar                         1 tablespoon
  • Salt                             1 tablespoon
  • Corn starch               1 tablespoon
  • Soy sauce                  2 tablespoon

做法:

  1. 用熱水將乾冬菇浸軟,然後切片備用
  2. 雞腿肉切小塊狀,用糖、鹽、生粉、生抽醃5分鐘
  3. 將米和水倒入煲裡,以大火煲滾
  4. 水滾後,即在飯面放上雞腿肉和冬菇,蓋上後轉中火煮20分鐘
  5. 20分鐘後,加入適量頭抽至飯裡
  6. 關上火,蓋上焗5分鐘即可

Directions:

  1. Soak the dried mushrooms with hot water. Once it softens, slice and set aside.
  2. Slice the chicken to thin stripe and season it.
  3. Cook the rice with high heat.
  4. Once the water boils, put the chicken and mushroom onto the rice. Close the lid and cook with medium heat for 20 minutes.
  5. Add soy sauce to the rice after 20 minutes.
  6. Turn off the heat and close the lid for 5 minutes to wait for the magic work. 🙂
